Chickpeas with tomatoes and onions
This recipe ready in under 15 minutes is truly incredible and so healthy! It is fresh, bright, tasty and healthy. It is perfect for those days where you don't fancy fish or meat. It works well as a lunch or a side-dish at dinner! I have made this for some friends at a dinner party and they all loved it too!
INGREDIENTS
250 g ready boiled chickpeas
2 tomatoes
4 onions
A handful coriander
2 tbs Ras el hanout
Olive oil
START ME UP!
Rinse the chickpeas. Heat some olive oil and add the chickpeas to it. Add 2 tbs Ras el hanout and fry everything for 3 minutes. Remove the chickpeas from the pan.
Cut the tomatoes into thin slices and the onions into rings. Braise the onions and tomatoes in the same pan as the chickpeas. Add the chickpeas to the braised onions and tomatoes after 5 minutes and reheat shortly.
Before serving sprinkle some coriander over the dish.
