Grain-free, Gluten-free Nut Bread

Do you love bread but hate how many carbs it’s made up of? I have the perfect solution for you! This nut bread is grain free, gluten free and high in protein! It can be prepared quickly and can be stored for a long time. I keep mine in an air tight container in the fridge for over a week. This nut bread can be combined with your favorite toppings, both sweet and savory! After one thin slice you already have a pretty satiating feeling.

Ingredients

  • 100 g almonds

  • 100 g pecan nuts

  • 100 g sunflower seeds

  • 100 g pumpkin seeds

  • 50 g sesame seeds

  • 50 g poppy seeds (if you do not have these, you can also add extra sesame seeds)

  • 100 g broken linseed

  • 5-6 eggs

  • 40 ml olive oil or coconut oil

  • Seasoning to taste

Start me up

  1. Preheat the oven to 160 degrees.

  2. Scramble the eggs in a large bowl.

  3. Now add all nuts and seeds to the egg mixture (I usually chop up the larger ingredients before adding them). Season to taste. Finally, mix the olive oil into the mixture.

  4. Poor the mixture into a rectangular nonstick loaf pan.

  5. Place in the oven (160 degrees) for 60 minutes.

  6. Cool down before serving.

  7. The bread is relatively hard as is to be expected. Use a sharp knife to cut thin slices.
