Easy Leek and Bacon Quiche

Do you love quiche? Then I have an amazing recipe for you! This healthy take on quiche Lorraine is full of healthy leek flavours and you will not be disappointed! There is also the possibility to make it lactose free.

Ingredients

8 servings

  • pie crust (fresh or frozen deep-dish)

  • 200 g bacon (cut into small pieces)

  • 5 small leeks (washed and thinly sliced)

  • salt and pepper

  • large eggs

  • 200 ml cream (I used a light and lactose free one)

Start me up!

  • Preheat the oven till 180 degrees.

  • Remove the pie crust from its package and place it in a pie dish.

  • Sauté the leeks in a little bit of butter or cooking oil until it is soft. Drain the leeks if necessary. There shouldn’t be any liquid left.

  • Fry the bacon pieces until crispy. Add the bacon to the leeks.

  • Beat all eggs with the cream. Season well with pepper and salt.

  • Cover the pie crust with the leek and bacon mixture and poor the egg and cream mixture over.

  • Place the quiche in the preheated oven for about 40 minutes.

  • Serve the quiche hot or cold with a tomato salad as a side dish.
