Egg Muffins

Do you ever get tired of eating the same lunch every day? Or are you looking for some healthy snacks? Try these egg muffins, they are the perfect lunch or snack!! Eggs are very much satiating and contain as good as no carbohydrates. Combined with a portion of vegetables they are the ideal snack.

This recipe is vegetarian, super-low carb, gluten free, lactose free.

Preparation time: 30 mins

Ingredients: 12 muffins

2 small bell peppers (colors of your choice)

6 spring onions

2 hands full of spinach

1 small broccoli

12 eggs

A pinch of curry powder

Pepper and salt

Start me up:

Preheat the oven at 180 degrees.

Cut the bell peppers into very small cubes.

Cut the broccoli into very small florets.

Chop the spinach coarsely.

Beat the eggs and season with pepper, salt and curry powder.

Use a muffin tin (lined with baking paper).

Fill every muffin tin with a mix of the vegetables and poor some of the egg mixture on top of it.

Bake the muffins for 15 to 20 minutes.
