Apple Oatmeal Pancakes

These apple oats pancakes make a great healthy breakfast or afternoon treat! They are gluten free, vegetarian and great hit with both kids and adults! It’s a win-win, enjoy!

Ingredients: (serves 3)

150 grams of oats

4 apples

3 eggs

8 tbs almond milk

A pinch of cinnamon

2 tbs coconut oil

1 tbs maple syrup

Toppings: raisins, Greek yogurt, maple syrup

Start me up:

Blend the oats into oat flour. Peel the apples and cut into small pieces. Steam the apples until soft. Add half of the steamed apples to the oat flour in the blender. Keep the other half of the apples aside. Add the eggs, the almond milk, the cinnamon and 1 tbs of maple syrup into the blender. Blend until smooth.

Heat some coconut oil in an anti-stick frying pan and scoop in a spoonful of the mixture. Make small pancakes. (The smaller the pancake, the easier to turn it).

Serve the pancakes with the left-over steamed apples and the other toppings.
